Apple Arugula Smoothie

Active Time: 10 minutes

Makes 2 servings

Ingredients:

  • 2 cups water
  • 3 cups arugula, not packed
  • 2 green apples, cored
  • 1/2 avocado
  • 1/2 cucumber
  • 2” fresh ginger root
  • Zest and juice of 1 small lemon
  • Ice

Directions:

  1. Add all ingredients to a high speed blender and blend until smooth. Pour into 2 glasses or to-go jars and enjoy.
