Pineapple Mint Smoothie

In Traditional Chinese Medicine, pineapple is a moistening and cooling tropical fruit. As such, it is best consumed in the summer months to help the body combat heat. Pineapples are a rich source of vitamin C, manganese, and copper.
- 2 cups fresh pineapple, from 1 small fresh pineapple, peeled, and diced (use the pineapple leftover from Summer Salsa, if there is any left, use this when making lunch for tomorrow)
- 1/2 avocado (use the rest when making lunch for tomorrow)
- 2 cups spinach
- 2 tablespoons chia seeds
- 2 cups water
- ¼ cup packed fresh mint leaves
- 1 cup ice
- 2-4 drops stevia (optional)
Add all ingredients to a high speed blender and blend until smooth. Pour into two glasses or to-go jars.
