Pistachio Fig Smoothie

Makes 2 servings

Ingredients:

  • 8 dried figs, soaked in warm water while gathering other ingredients, about 5 minutes
  • 2 cups unsweetened almond milk
  • 2 cups spinach
  • ½ avocado
  • 2 tablespoons pistachios
  • 2-4 drops stevia, optional

Directions:

  1. Add all ingredients to a high-speed blender and blend until smooth. Taste and adjust sweetness using stevia, and thickness using milk.
