Raspberry Cashew Breakfast Bowl

Makes 2 servings

Ingredients:

  • 1/3 cup raw cashews, soaked overnight, rinsed and drained
  • 1 ½ cups almond milk
  • 1 ½ cups frozen raspberries
  • 2 cups spinach
  • 1 teaspoons vanilla extract
  • ¼ teaspoons fine sea salt
  • 2-4 drops stevia to taste (optional)
  • Toppings: 1 tablespoon coconut flakes (per person), ½-1 teaspoon chia seeds (per person)

Directions:

  1. Add all ingredients (minus toppings) to a high speed blender and blend until smooth. Pour into 2 serving bowls and top with coconut flakes and chia seeds (per person).
