Melissa attended SUNY Plattsburgh, NY and received a Bachelor's degree in Psychology followed by her first Master's degree from Syracuse University, NY in Marriage & Family Therapy. Melissa worked for 12 years in Middlebury, VT supporting adults and teens with mental health issues. The teens she worked with at Middlebury Union High School inspired her to return to school and achieve a second Master's in Five Element Acupuncture from The Academy for Five Element Acupuncture in Gainesville, FL. She also holds a Certificate in Chinese Herbal Studies. She's a licensed acupuncturist in NY, VT and FL and holds a Diploma in Oriental Medicine. Melissa brings her education from both worlds to help people reconnect to their joy and passion. She is also a self-defined "foodie" and is a passionate supporter of local farmers and their organic food. She believes food is medicine and is excited to share her knowledge with others.
TRISTAN FAVILLE, MScN
Tristan Faville has a Masters degree in Clinical Nutrition from the National University of Naturopathic Medicine in Portland, OR. She specializes in a whole foods approach to diet and well-being and believes that when used correctly, food is our best source of medicine and long lasting health. Having grown up in the restaurant industry Tristan has developed a close relationship with food and cooking. She understands that healthy, sustainable lifestyles begin with local farmers and food producers and extend into the kitchen with how food is prepared. Tristan currently provides holistic nutrition counseling as well as community based cooking classes in the Adirondacks, New York and Vermont.
Keith Castro is a chef from Upstate New York with over 30 years in the food sales & distribution and restaurant industry. He strongly focuses on local, organic products that come out of the region. His restaurants have always featured menu items with seasonal ingredients. Keith believes that eating food in the prime of its growth & nutrition is best not only for the quality of the dish but for the people eating it. He believes it’s important for our society to take a step backwards, away from industrialization and factory farms, towards local whole foods when it comes to sourcing our ingredients.

Rebecca grew up in a small town on Lake Champlain, in the Adirondacks about 90 miles south of Montreal, Canada and 9 miles directly across the lake from Burlington, VT. She is proud of her roots and credits a lot of her core values to them. She earned a M.Ed. from Springfield College in Springfield, MA and a B.S. in Elementary Education from the State University of New York at Plattsburgh in Plattsburgh, NY.
Rebecca's philosophy in life is "Pay it forward." There have been so many loving, selfless people in her life that have helped shape who she is and where she explores.
Rebecca worked in the education and the advertising field before becoming a pharmaceutical sales rep in the Boston area. She chose to attend the Franklin Covey Coaching certification program in Salt Lake City, UT to enhance her established foundation of coaching skills. It was during that transition period that she decided to marry her two strengths of coaching and recruiting into Palmer & Young, Inc., a national recruiting & coaching firm for pharmaceutical & biotech companies for the last 18 years. Along the way she realized that her true passion was eating organic food for optimal health and supporting her local farmers, and wanted to take that to the next level.
